Ruminants like cows, goats, and sheep have a specialized stomach with four compartments. One of these compartments, the rumen, is filled with bacteria and other microorganisms that can break down cellulose into glucose through a process called fermentation.

Humans, on the other hand, lack the necessary bacteria and the enzyme cellulase to break down cellulose. Therefore, when we eat plant material, the cellulose acts as dietary fiber, which is not digested but passes through the digestive system and aids in digestion.
